Potty Training Time

It's official...there's no turning back...we're potty training! I'm so excited because Jenna is doing GREAT!

When Jenna was about 8 months old, I decided to try early potty training or "elimination communication"...(see my post here)...and what a waste of time that was! Maybe it works for some people, but not for us! She did fine sitting on the potty before she was mobile, but once she started walking, she would not sit still long enough to use the potty.

After that I still kept the potty out and when I would use the bathroom I would ask if she wanted to use the potty. She always said no, but then a couple weeks ago she said yes! She started out by pretending to use the potty. Last Wednesday I decided to leave her diaperless. It worked like a charm! Since then, she's been not wearing a diaper and only sleeping in one. She has done really well and hasn't had any accidents for a few days. I think what helped a lot was having her run around naked for the first couple of days.

I haven't taken her out in public much...I am kind of afraid she will be too distracted to use the potty away from home, so that's the next thing we have to master!

Dairy-Free Recipes - Pina Colada Smoothie

So I have a been experimenting with some dairy-free/gluten-free recipes and found a delicious smoothie recipe that I had to share.

I found the recipe on the Once A Month Mom's blog, which she found on Angela's Kitchen blog. Both are excellent resources for g-free/dairy-free recipes.

I am always in a hurry and our grocery stores have limited selection, so I just grabbed a can of crushed pinapple, used the juice in the can, added the coconut milk and ice. I did not buy any extra pineapple juice or add the sweetner, but you can tweak it to your liking.

I made a bunch at once and froze the smoothies and just thaw when I'm ready to eat.

Pina Colada Smoothie :

Gluten Free Dairy Free Pina Colada Smoothie – makes 2 servings

1/2 mango, peeled and cubed OR 6 oz can crushed unsweetened pineapple (including juice)
3/4 cup canned, unsweetened pineapple juice
¾ cup coconut milk
1/2 tablespoon sugar, honey or other sweetener
3/4 cup ice cubes
Place all ingredients in a blender.  Cover and blend ingredients until smooth. You can adjust the consistency by adding more ice if it’s too thin or more liquid if it’s too thick.  Pour in glasses.
I have found that I really like the milk substitutes out there. I prefer to use Blue Diamond Vanilla Almond milk for cereal/oatmeal. I like to use unsweetened coconut milk for cooking & baking. Just this morning I made scrambled eggs with coconut milk and it was really good. You could not taste any coconut flavor and the consistency of the milk made the eggs super fluffy. Even if you don't have a dairy allergy you might consider using one of these milk substitues as they are lower in fat/calories.

Likes/Dislikes: She loves sitting up to play. She loves playing with Jenna too. She has also been trying to get her hands on any electronics she can find, especially computers and phones.

Natalie can sit on her own now for quite a bit of time. She still topples a little, but she's doing really good.

Natalie sat through her first movie at the theater - Chipwrecked, Alvin & Chipmunks.
